How to raise a good hunting dog?

I'm still a bit uncertain how to raise a good hunting dog. Majority of Estonian hunting dogs are Laikas or Dachshunds and they are not taught much. It is all based on natural selection. A bunch of puppies are raised, tested and selected - if it is in the genes, it is OK. Commands like "come here" or "search" are strangers to most of these dogs.

So I'm thinking how to act with a JRT terrier puppy to have a good blood tracking, fox hunting and rabbit chasing dog in the future. I have tried to introduce him as many game residues as possible: beaver skin, rabbit tail, roe deer leg, fox fur - to make sure that these things don't come as a surprise to him. Outcome is promising. He likes to tear beaver skin, throw around the roe deer leg. My only hope is that he don't start thinking that this is just a piece that doesn't attack back - or start thinking during a hunt that this is just a game and he is not in the mood of playing.

Underground seems to be very interesting place for Ruudi - like expected. We made a black tunnel, threw deer leg into it and the outcome is just amazing. Seems very interesting to go after this. The following is a short video showing how interesting is to pursuit deer leg in the black tunnel or how "in genes" it is to tear off and shake it. He doesn't do it much with industrial toys.
